Single Wide Stave Walnut Worktops
American Black Walnut is so highly prized it even has its own special rules in the NHLA ( The North American Hardwood Lumber Association ) grading rules handbook.

This particular worktop was made from American Black Walnut from NorthWest Hardwoods in Onalaska, Wisconsin. It was oiled just once on the day the photographs were taken. Wisconsin is bang in the middle of the American Mid West, to the north end on the border with Canada. Here there really are four distinct seasons, with Winter and Summer often having extremes of cold and hot respectively.
To get walnut planks this long clear of any defects is a difficult and frustrating process. Most FAS ( The top grade of lumber ) Walnut lumber is between 6' and 9' - roughly between 1800 mm and 2700 mm. Despite being the very finest Walnut money can buy, this lumber still has defects in the plank.
A 9' plank clear of any defects appears once every 20 to 30 planks, depending on how lucky you get. To find boards longer than 2700 mm without any defects is really a gift of nature, and I would estimate from a truck load of Walnut lumber which weighs in at around 12 tons, you may get enough planks to make up three of these worktops. This is why the price of these worktops is so high, and also why the price increases proportionally the longer they get. The photgraph above is a typical bundle of FAS Walnut. The blue ends are a type of wax to stop the ends from splitting. This bundle is around 1100 board feet and we would expect to get 15 worktops from it; one single wide stave, 3 traditional plank and the rest classic butchers block.
